Stuffed French Toast

Yield: 8 Servings

Ingredients

  • 8 oz. cream cheese
  • 3/4 c. strawberry jam or jam of your choice
  • 1/4 c. chopped pecans
  • French or Italian bread
  • 4 eggs
  • 1/2 c. milk
  • 1 tbsp. vanilla

Instructions

  1. Mix cream cheese, jam and nuts. Cut bread into diagonal pieces about 1 in. thick. Cut pocket in each slice and stuff with mixture.
  2. Beat together eggs, milk and vanilla in a medium size bowl. Dip filled bread into egg wash, coating both sides. With skillet on medium heat, coat with butter or margarine, and cook bread until brown on both sides.
